2008 Ice Wine

TASTING NOTES

On a frigid morning of December 2008, before dawn, when air temperature showed 12F, we delicately picked up the Riesling grapes naturally frozen on the vine and pressed them before they thawed. Only few drops of this delicacy can be extracted from each bunch and are allowed to ferment into this opulent nectar. Its harmonious flavors of grapefruit, pear, lime, peaches, and honeyed apricot precede the decadent sweetness and vibrant structure that lasts on a long aftertaste.

Served chilled it is a dessert by itself but it will also be pairing successfully a crème brulee, a dark chocolate ice cream, a lemon torte or a ripe blue cheese.
