Close to 3,900 growing degree days accumulated due to an excessively warm year. As a result, our 2015 Claar Cellars Cabernet Sauvignon was harvested in early September. This cabernet Sauvignon has a dark, eggplant like color. The first smell contains aromas of dark spices. Cloves, licorice and vanilla dominate the spice portion of the bouquet while dark aggregated fruit aromas of blackberry and mountain huckleberry intensify from the heart. The tannins are gritty and chewy swirling within a rich and voluminous palate. After the first sip, the tannins subside, and the fullness of flavor is revealed.
2015 Cabernet Sauvignon
A growing season with above average temperatures provided for fruit of significant quality. Fermentation occurred in small vats with punch downs occurring twice daily until the desired extraction was achieved. The fermentation was completed in multiple lots of new and semi-neutral French oak barrels. The barrels were racked once upon completion of malolactic fermentation and then again after 8 month’s maturation. The wine was topped every month with the best wine in house. Careful blending of wine lots from select blocks within our estate vineyards produced a wine with exceptional quality.
