Our 2012 Petit Verdot has a dense octopus ink, maroon color. Gardenias, violets, cascade berry jam, Mexican chocolate, licorice, cedar and clove aromas present themselves. Vibrant black fruits explode on a smooth, full-bodied palate containing chewy, dusty tannins and a sweet, jam-like textured finish. This bold wine is ready to drink now and has an extended ageing window of 10 years.

Harvest Date: November 10, 2012 Brix: 23.6 Yeast: BCS103 Saccharomyces cerevisiae/Saccharomyces bayanus hybrid that is known for clean fermentations that respect varietal character. Fermentation: Fermentation occurred in small vats with punch downs occurring twice daily until the desired extraction was achieved. The fermentation was completed in 100% new French oak barrels and malolactic fermentation ensued. The barrels were racked every six months and the wine was topped every month with the best wine in house. Careful blending of wine lots from the AVAs of Walla Walla and Columbia Valley provide a wine with richness and character that resembles that of the highest quality wines from WA State.
